Simple and Fresh Summer Dinner- Pear, Pecan and Gorgonzola Salad


Hello, happy Tuesday! I do not know if you are like me, but I feel like this summer is FLYING by!  We will be in football season again before you know it! During the summer, I always struggle with what to prepare for dinner that does not require the oven.  Since our home doesn't have air conditioning, it makes dinner time especially steamy if I am cooking a big meal in the oven.  So, as a result, I have had to come up with delicious and easy meals that are quick and oven free.  One of my newest favorites is a simple Pear, Pecan and Gorgonzola salad, with a balsamic vinaigrette.  This recipe is SO easy it will take you less than 10 minutes start to finish. If you want protein, you could add some prosciutto or grilled chicken.  

Pear, Pecan and Gorgonzola Salad
  • Spring salad mix (or whatever is your favorite)
  • 1 medium anjou pear, sliced thin
  • 2-3 Tbsp gorgonzola cheese (per serving)
  • 1/4 cup roughly chopped pecans (could used walnuts as well!)
  • Balsamic vinegar dressing ( I use Brianna's New American Balsamic..its my FAVORITE!)

Place a good sized portion of the salad mix on each plate.  Evenly divide the pear slices between each plate. Sprinkle over cheese and pecans to each plate and drizzle with your favorite balsamic vinegar dressing. ENJOY!
